Founded in 2017 by the Restall family in tropical Byron Bay, NSW. Lord Byron Distillery is powered by 100% renewable energy, with a large focus on provenance and quality. This rum was distilled in January 2020 in a copper pot still using locally sourced molasses, and left to mature in a single ex-bourbon American oak cask prior to being bottled at cask strength in December 2023.


The Origin

A deliciously complex Australian Rum made from locally sourced quality molasses, that spent 1 month shy of 4 years warm-climate maturing in a single ex-Jack Daniels cask in tropical Byron Bay.

Molasses is a thick, dark syrup produced during the sugar-making process. The sugar cane is crushed and the juice is extracted. The juice is then boiled eventually resulting in a thick, brown syrup. The end result is a quality molasses and in Lord Byrons case, it comes from local, NSW Sugar Milling Co-operative.

Tasting Notes

Nose:
Tres Leches cake, pineapple, green mango, kiwi fruit, grapefruit and tiramisu.

Taste:
Apple cake, super ripe pineapple, green kiwi, butterscotch and banana.

Finish:
Pawpaw, green mango, vanilla creme and ginger snaps. Medium-long length.
