Distilled by Valero Jimenez and exclusively matured in a fresh Pedro Ximenez Sherry cask prior to it being bottled at natural cask strength. The Origin
Joadja Distillery is situated within a valley of the historic town of Joadja, located in the Southern Highlands of New South Wales, Australia. The town of Joadja was established in the 1870s by Australian miners and quickly attracted many Scottish miners who brought with them skills for mining and also distilling.
In 2011 the Jimenez family purchased the estate and within a few years started producing whisky with inspiration from the Scottish heritage, and history of illicit distilling in the valley all those years ago. Together with their Spanish roots, they have been sourcing quality Sherry butts from Jerez de la Frontera, Spain in which they proudly mature their single malt whisky.
Joadja use their signature pale malt barley sourced from Voyager Craft Malt in New South Wales Australia, along with natural spring water that comes from a spring which is located on the site at Joadja Distillery.

The various types of Sherry casks at Joadja are all sourced from Jerez de la Frontera, Spain and have held sherry for a significant time. With Spanish roots and connections to various bodegas, the Ximenez family have access to some of the best sherry casks available to whisky producers.

Tasting Notes
Nose:
Classic PX cask. raisins and sultanas, Medjool dates, brown sugar, dark chocolate, ripe berries and orange blossom.
Taste:
Big notes of chocolate, roasted coffee, strawberries, sultanas and dates.
Finish:
Dark chocolate and orange oils. Very long in length.

This intensely dark Pedro Ximenez from Jerez, Spain, has spent a total 7 years maturing in wood prior to being bottled straight from the cask. No dilution, no filtration, simply from cask to bottle.
Matured initially in the home of Sherry, Jerez de la Frontera, Spain for a period of 5 years, then an additional 2 years of maturation at Joadja in an ex-Brandy cask made from American white oak. The additional maturation in an ex-Brandy cask has added additional layers of flavour and complexity to the PX. It is the darkest thing we have ever seen in a bottle and it is incredibly delicious.
