A single cask Australian Rum that is sure to impress. Distilled by Genise Hollingworth and exclusively matured in an ex-Shiraz French Oak cask. With notes of mixed berries, plums, honey, coffee, chocolate, leather and menthol. It’s rich and it’s funky. Our most limited release to date with only 84 bottles.

The Origin
For well over a decade, Black Gate Distillery founders Genise and Brian Hollingworth have been distilling rum and whisky in rustic country town Mendooran, New South Wales. They began creating dark rum long before distilling their signature heavily peated whisky, for which they are well known.
Head rum distiller Genise passionately oversees the production of their hot climate rum, using a direct-fired copper pot still, premium sugar cane molasses, and a prolonged 2-week fermentation. The extended fermentation time increases the potential for esters to form resulting in an extremely rich, full-bodied rum with fruity funk.
This limited release was left to mature under her watchful eye in a single French Oak, ex-Shiraz cask before being bottled.
Tasting Notes
Nose:
Deep rich nose. Mixed berries and black plums covered in honey. A waft of spent matches and fruit funk.
Taste:
Starts sweet and fruity with Strawberries and ice cream covered in syrup, mixed berry compote and banana chips. Then black Spanish olives, roasted coffee beans, dark chocolate and old leather.
Finish:
Rocky road chocolate, coffee beans with some complimentary spice and a touch of menthol.

The French Oak cask originated from Cooperage Saint Martin, France. Located an hour from Bordeaux.
Bottling of the Rum is complete. The natural colour of the rum shines in all its glory.

The cask was sourced locally from Huntington Wine Estate where it held their highly acclaimed Shiraz, prior to being filled with this rum.
Bottles are ready to be packaged and shipped to our warehouse. Notice the direct-fired copper pot still in the back used to make this rum.
