This intensely dark Pedro Ximenez from Jerez, Spain, has spent a total 7 years maturing in wood prior to being bottled straight from the cask. No dilution, no filtration, simply from cask to bottle. Matured initially in the home of Sherry, Jerez de la Frontera, Spain for a period of 5 years, then an additional 2 years of maturation at Joadja in an ex-Brandy cask made from American white oak. The additional maturation in an ex-Brandy cask has added additional layers of flavour and complexity to the PX. It is the darkest thing we have ever seen in a bottle and it is incredibly delicious.

Nose: Sweet and earthy. Dense raisins, tobacco, dates, molasses, balsamico and rich chocolate.

Taste: Chocolate, raisins, dates, buttered popcorn, honey and caramelised sugar.

Finish: Everlasting length.
